Basic Brown Mustard

A french-german mustard
  • 1.5 tbsp ground mustard
  • 15 g yellow mustard seed (whole)
  • 15 g brown mustard seed (whole)
  • 0.5 dl apple cider vinegar
  • 2 tsp garlic powder
  • 1 tsp allspice
  • 1 tsp turmeric
  • 1 tsp sugar
  • 0.25 tsp salt
  • 0.25 dl water

Crack the whole seeds in a grinder or mortar.

Mix all ingredients together into a small pot.

Bring to boil. Boil for only 30-60 seconds.

Transfer to clean jar to cool.

Leave at room temperature for 24-72 hours.

This brings the flavors together, and debitters the mustard seed. It will be very bitter before aging.

Thin out with water as needed.

It will thicken over time.

Transfer to refrigerator.
