Loaf of meat
INGREDIENTS
  • 1 kg ground beef
  • 1 egg
  • 3 carrots
  • 1 white onion
  • 5 garlic (cloves)
  • 170 g panko
  • tomato paste
  • chipotle sauce
  • 1 tbsp chili powder
  • 2 tbsp thyme
METHOD

Preheat oven to 170°C

Pulse carrots, onion, and garlic in a food processor until diced or minced.

Mix panko with dry spices, salt and pepper.

Combine ground beef, vegetables, and spiced breadcrumbs.

Add the egg.

Mix until consistent, 'trying not to squeeze.'

Pack mixture into a bread loaf pan.

Toss in the oven uncovered, bake for 15 minutes.

While baking, mix tomato paste and chipotle sauce together. Alternatively, substitute with any other sweet and flavorful glaze. Worcestershire sauce, honey, hot sauce, chipotle, adobo, brown sugar, etc. are all valid.

After 15 minutes, remove loaf from oven, cover it with the glaze, and return to oven.

Bake another 45 minutes, or until center is 67°C.

Allow to rest for 5-10 minutes. Internal temperature should continue rising to 70°C.

Slice to serve. Serve with root vegetables, mashed potatoes, slaw, mint peas, or whatever.
