Black Bean Burger

Mushy protein discs
INGREDIENTS
  • 500 g black beans (cooked, drained)
  • 2 eggs
  • 2 garlic cloves
  • 1 yellow onion
  • 10 walnuts
  • 50 g panko bread crumbs
  • 2 tbsp olive oil
  • 3 tbsp cumin (ground)
  • 1 tbsp smoked paprika (ground)
  • 1 tsp mustard seed (ground)
  • 2 tsp salt
METHOD

Toast walnuts in frying pan, 3-4 minutes at medium heat.

Finely dice walnuts and onion, mince or press garlic.

Combine all ingredients in large bowl and stick blend until most beans have become paste, but some chunks remain.

Thin as needed with oil, water, or broth. It should be dry enough to shapoe, wet enough not to crumble.

Form into equal sized patties on sheet of baking paper.

Fry patties in plenty of oil, about 5 minutes on each side.
